Peanut Chutney

Peanuts are not nuts but, but a legume related to beans and lentils. They are naturally cholesterol-free and are a good source of folate, which can reduce the risk of certain birth defects in the brain and spinal cord. Peanuts are good sources of vitamin E, niacin, folate, protein and manganese. Not only do peanuts contain oleic acid, the healthful fat found in olive oil, but new research shows these tasty legumes are also as rich in antioxidants as many fruits. There are many more amazing benefits of these peanuts. Here comes a simple and common peanut chutney recipe,

Peanut Chutney

This peanut chutney is going to paticipate in My Legume Love Affair - Eighth Helping by Susan of The Well-Seasoned Cook.

INGREDIENTS:

  • 1 cup Peanuts, dry roasted and deskined
  • 4-5 Green chillis, slit length-wise and deseeded
  • 1/4 tbsp Jeera
  • 2 tbsp Tamarind pulp
  • Salt to taste

TEMPERING/TADKA/POPPU:

  • 1/4 tbsp Mustard seeds
  • 1/4 tbsp Jeera
  • 1 dry Red chilli
  • 2 cloves Garlic
  • 6-9 Curry leaves
  • Oil

Peanut Chutney

PREPERATION:

  • Add oil to kadai or heavy bottom cooking vessel and to it add green chillis and jeera. Fry till jeera seeds starts to splutter. Leave it to cool.
  • Now grind peanuts, green chillis, jeera, salt and tamarind pulp.
  • Add water to get the desired consistency of the chutney.
  • In the remaining oil add the ingredients listed under tempering and once they start to change color, turn off the flame.
  • Pour out this tempering to the above grind mixture. Serve with piping hot dosa's, Idli's, vada's,......
  • Last but not least add your 'love' to make the dish 'YUMMY'.

Yummy, i love this chutney.I make this chutney when i make idly.Instead of green chillies i use red chillies.

This is a new chutney for me, but sounds good...I imagine it would taste great with dosa or even just rice and yogurt.
